Plenty of “blue” and “bite” that develops over time. I keep mine in a French cheese storage bag from Formaticum; let it come to room temp, sometimes add a dollop of peach jam and enjoy it with a modest vintage Port. Truly a cheese apart!

It is DELICIOUS. The cheese is alittle sweet and not too overpowering like some Gorgonzola is. I loved it in my recipe. I just wish more stores sold it but I will be making another trip to Giant to purchase a few more. Thank you.
